Scotch Eggs

Scotch eggs are a hard-boiled egg, wrapped in sausage, breaded, and fried. Slice them up and serve them with a side of honey mustard dip or enjoy them over a bed of lettuce.

What a great way to use up any left over hard-boiled eggs from Easter. Hard boiled eggs last up to one week in the fridge. Peeled or not they should never be used if over one week old.

Instructions
  1. Add sausage, soy sauce, flour, and black pepper to a medium bowl
  2. Mix all of these ingredients with your hands
  3. Divide the sausage into 4 equal parts
  4. Take and flatten out 1/4 of the sausage and wrap it around 1 hard-boiled egg, continue this step until each egg is wrapped
  5. Using two medium bowls add beaten egg to one and the bread crumbs to the other
  6. Roll each egg into the beaten egg
  7. Coat each egg with bread crumbs
Cooking
  1. Turn your oil fryer to 360°F.
  2. Fry each one for 5 minutes
  3. They will appear dark golden brown once you remove them
  4. Let cool on a paper towel, and enjoy
